About La Bailliage de San Diego.

The Chaîne des Rôtisseurs is an international gastronomic society dedicated to the appreciation, preservation, and advancement of fine dining and culinary culture. Created by King Louis IX in 1248 in France. The modern gastronomic society was revived and officially founded in Paris in 1950, and brings together chefs, sommeliers, hospitality professionals, artisans, and devoted gastronomes who share a commitment to excellence at the table.

The San Diego Bailliage proudly upholds this rich tradition while celebrating the distinctive culinary spirit of our region. Known for its diversity, innovation, and access to exceptional local ingredients, San Diego offers a natural setting for the Chaîne’s values to flourish—honoring both classical foundations and contemporary expression.

Since 1990, through curated dinners, tastings, induction ceremonies, and educational experiences, our San Diego Bailliage has created opportunities for members to gather in fellowship, deepen their appreciation of gastronomy, and recognize the craftsmanship behind outstanding cuisine and wine. Each event reflects the Chaîne’s enduring belief that the table is a place of culture, connection, and shared respect. The La Jolla Bailliage, founded in 1971 was merged with the San Diego Bailliage in 2026.

At its heart, the Chaîne is about more than food. It is about community, tradition, and stewardship—the responsibility to uphold standards, support culinary professionals, and pass forward a living heritage. Membership is both an honor and an invitation: to participate thoughtfully, to celebrate excellence generously, and to contribute to a global fellowship bound by a love of gastronomy.
